What are your family’s top 3 favorite meals?
This daily prompt asked about our family’s top three favorite meals and I realized how much of our weekly rhythm is built around simple dishes that are delicious, nourishing, and easy to make. These are the meals I find myself returning to again and again because they check every box. They are family friendly, protein packed, and filled with flavor without feeling heavy. Consider this your sign to add something new to your meal rotation.
The first staple in our home is something we call One Pan Creamy Cajun Chicken Sausage Pasta. This dish is amazing because it is full of protein and completely dairy free. You take full portion ingredients along with a two to three pound package of chicken breasts and throw everything in one pan. A very large pan. I have even used a wok because it is big enough to hold it all. The coconut cream makes it incredibly creamy while keeping it dairy free. If you love coconut you will be obsessed. Protein penne pasta, chicken broth, fire roasted diced tomatoes, and chicken sausage all come together in the easiest weeknight meal. Do not knock it until you try it.
The next favorite is a sun dried tomato pasta salad. You can definitely tell we are big fans of tomatoes. This cold pasta salad is packed with flavor and nutrients and only tastes better the next day after sitting in the fridge. The dressing is made from the oil that the sun dried tomatoes are stored in and it gives the entire dish a rich depth of flavor. You can add whatever you like but we usually mix in cucumber, spinach, red onion, and sometimes feta. Everything gets tossed with rainbow spiral noodles and the sun dried tomatoes for an addicting and healthy dish. You can add chicken too and on lazy days we simply use canned chicken.
The last dish leans into Asian inspired flavors. It is a ground turkey stir fry with a homemade stir fry sauce and it is another one pan wonder. Start with sliced white onion, multicolored peppers, and ground turkey and fry everything together in a little oil. Have your rice cooking in a rice cooker because in my opinion a rice cooker really does change everything. The homemade sauce is made with coconut aminos which is a low sodium soy sauce substitute along with toasted sesame oil and other ingredients for heat such as sriracha. We enjoy choosing the more health conscious options when we cook and this dish is the perfect example. Lean, low sodium, and full of flavor. That is the way we love to eat.
